These look really fancy and make perfect canapés for a party without the fuss. Quick and easy, they will impress with next to no effort. A good fresh cucumber is essential – no flabby, passed it affair will be up to scratch – invest in an organic one! Pink peppercorns to top add a subtle crunch and spice without being overpowering.
2 medium or 1 large cucumber peeled and cut into 1.5 cm rounds
2 tblsp soya yoghurt
2 tblsp soya cream
pinch of salt
rind of a lime
juice of half the lime
pink peppercorns to decorate
dill sprigs to decorate
1. Once you’ve cut the cucumbers into rounds, use a teaspoon to remove the centre of the cucumbers to leave a space for the filling.
2. In a small bowl, mix together the soya cream and yoghurt with the salt, lime juice and rind. Put a teaspoon of the cream mix into each cucumber boat and decorate with a few pink peppercorns and a sprig of dill.
