In Winter, veg soup is an essential! This is a great staple recipe that you can add any veg you like to. Serve hot at lunch time with some corn bread et voilĂ ! A satisfied stomach you will have!
2 leeks
2 carrots
2 parsnips
1 small squash or sweet potato
1 small swede
170g lentils
2 tsps cumin seed
1 tsp turmeric
stock
parsley (optional for serving)
1. Sauté the onion with a little oil in a large soup pan.
2. Add the leeks, carrots, parsnips, squash and swede or whichever veg you’re using, plus cumin and turmeric.
3. Add the lentils and a litre of stock and simmer for 20 minutes. Add more water if the soup is too thick and generously grind in some black pepper. Serve sprinkled with parsley.
